Buddha Bowl

BUDDHA BOWL This is a quick and easy dish to make! The longest part is making the rice but if you have a rice cooker. Set that up, and let it go. When you come home your rice will be cooked, and all you have to do is add a few more things to this dish, and whola it is DONE!  Ingredients:  1 cup Brown rice cooked Avocado Salsa Black beans Salt, to taste Pepper, to taste Jerk seasoning Chili seasoning Cooking Instructions: Once your brown rice is cooked, season it with salt, pepper, and jerk seasoning. I added 2 tablespoons of jerk and chili seasoning to my rice. You can add more if you like a stronger taste.  Heat up black beans on the stove. You may add some additional jerk seasoning to them if you like.  Chopp up your avocado, and any other vegetable that you would like to add to this dish.  Layer them in a serving dish, and serve! Whola! It's done! You can change up this recipe in several different ways. Add spinach, or sautéed peppers.

Spicy Vegan Fajitas

Spicy Vegan Fajitas This dish is AMAZING! First time I tried baking my fajitas instead of the traditional frying pan. I would definitely make this recipe many more times to come. The best part about this recipe is that it is super easy to make, and it is quick and easy. Plus, making extra for tomorrows lunch is a MUST! What I love the most about fajitas is that you can spice things up or turn the spice down a few notches. I know every time I make a fajita I change up my seasonings. Ingredients: ·       Colored peppers, red, yellow, orange ·       Onions ·       Cauliflower ·       Mushrooms ·       Habanero pepper ·       1 Tbsp. Chili powder ·       1 Tbsp. Ground Cumin ·       1 Tbsp. Garlic powder ·       1 Tbsp. Paprika ·       Salt (to taste) ·       1 Tbsp. Black pepper (to taste) ·       1 Tbsp. Oregano ·       1 Tbsp. Onion powder ·       1 Tbsp. Cayenne pepper ·       1 Tbsp. Cilantro ·       1 Tbsp. Chipotle Chile pep
