Buddha Bowl



BUDDHA BOWL




This is a quick and easy dish to make! The longest part is making the rice but if you have a rice cooker. Set that up, and let it go. When you come home your rice will be cooked, and all you have to do is add a few more things to this dish, and whola it is DONE! 

Ingredients: 


  • 1 cup Brown rice cooked
  • Avocado
  • Salsa
  • Black beans
  • Salt, to taste
  • Pepper, to taste
  • Jerk seasoning
  • Chili seasoning


Cooking Instructions:


  1. Once your brown rice is cooked, season it with salt, pepper, and jerk seasoning. I added 2 tablespoons of jerk and chili seasoning to my rice. You can add more if you like a stronger taste. 
  2. Heat up black beans on the stove. You may add some additional jerk seasoning to them if you like. 
  3. Chopp up your avocado, and any other vegetable that you would like to add to this dish. 
  4. Layer them in a serving dish, and serve! Whola! It's done!
You can change up this recipe in several different ways. Add spinach, or sautéed peppers. But for this meal I made it towards what my husband likes. My daughter LOVED it, she has already enjoyed this meal a few times already. Each time she prepares it she will find something else to stick on top of it. LOL

Week 4 Bringing Buff Back

Now she did not have much weight to lose as I do. But she still looks phenomenal! Friday, June 17th  Today is my first day back in the gym from my intestinal inflaming. It felt GREAT! I completed 40 minutes of cardio on an elliptical machine. After completed some additional stretching on one of their machines. Homemade Quinoa Bread

This  quinoa bread is very simple to make. It is gluten-free, yeast free, and its vegan. Because you don't need to mess with yeast this makes this an easy bread to make. Only takes about 5-7 minutes to prepare, and 60 minutes to cook, and another 60 minutes to cool. Preheat your oven to 400 degrees, and take out your bread pan and grease it with a little bit of coconut oil. When I started this recipe I used my blender to blend the quinoa, gluten-free flour (I used gluten-free oats), baking powder, baking soda, and salt. Blend for a few minutes until the quinoa is grinder down into a fine flour and everything is mixed.  Next, I poured everything into my food processor but you could still use the blender too. Pour the flour from the blender, and add all the liquid; Almond milk, honey, and coconut oil.
