Spicy Black Bean Burger with Lime


Craig always gets to eat vegan burgers or black bean burgers when ever we go out to eat or he will pick them up in the grocery store. Well for me, I can't eat them because they either have soy or gluten or another food item that I am allergic too. I never get to try them! I decided that I wanted to make a black bean burger and see if I actually like them. Making them is the only way I will be able to try them. So here we go!

One great thing about these burgers is that they are full of protein! It is a great option to use for a meal instead of always cooking the regular meat burger. I dare you to try something new! Making a black bean burger and make it exactly how you would make your burgers at home. I bet you may enjoy it too. 8)

Lately, I have been into spice and I do have a taste for spicy. I don't like the super hot where it burns off your taste buds and leaves your mouth burning for hours. Some people are into that but I am not but I do like some spice to my meals.

When food prepping these burgers will last about 5 days in your refrigerator. I am still a little funny about leaving food in my refrigerator past 3 days let alone 5. I will freeze some of them instead of storing all of them in my refrigerator.

When freezing them make sure to use parchment paper in between each patty. That way they don't stick together. There is nothing like getting upset because your one patty just turned into 3 patties because they are frozen stuck together! That can be a little frustrating, and we don't want that.  To avoid the frustration make sure you slip in some parchment paper in between each patty insuring that they won't stick together and its super easy taking what you need out of the freezer.

Right now I use a large zip lock freezer bags to store my burgers in but I am trying to replace most of the plastic in my house to help save our planet. Storing them in glassware is another option. Another good thing about making these is that you can store them in your freezer for about 3 months. That way when you are short on time you can grab a fresh burger and throw it in the oven on 375 degrees F, and cook them frozen for about 25 minutes, and whoala you have your protein for your meal in minutes! You could even throw in some sweet potato fries and make a small salad and your meal for the night is done!

This recipe makes 3 1/2 burgers. You may need to double up this recipe or triple it if you want to store some in your freezer for those days when you just don't have any time to really make anything.

First, take the black beans and if you are using canned make sure to rinse and drain them. Then pour them into a bowl. Next you will need a potato masher to mash the beans. The goal here is not to mash up all the beans just some of the beans. You want to have chunks in your burger.


In a small bowl add all the dry ingredients together and mix well. Once the seasonings are blended together pour them on top of the black beans, and add the coconut oil and lime juice. Then mix everything together until blended. 


If you would like to add some other vegetables to your burger chop them up and add them to your bean mix. I added some red peppers to mine. You can add some onion to them if you like too. But I don't like onion as well but I did add the onion powder. 8)


Once everything is mixed now place your bowl into the refrigerator for 15 minutes to  an hour. Let everything settle before making them into patties. This gives them time for them to firm up,  and let the seasoning soak into the beans. Making this supper yummy! Once your beans had time to settle its time to take them out and make them into burger patties. Me personally I like everything measured out into the correct serving size. I use the 1/2 cup to measure first then make them into patties.


Heat up your frying pan or grill, and get ready to cook them up! If needed add 1 more tablespoon of coconut oil or alternative oil of your choosing. Fry them on each side for approximately 5 minutes or until a nice brown crust appears on both sides.


Once cooked you can make your burger any way you like. With a bun without a bun. Me personally I love it in a lettuce wrap. Yes, still addicted to my lettuce wraps 8). You can add any toppings you would like such as: avocado, tomato, onion, lettuce, pickles, ect...

  • 1/2 tsp garlic powder or fresh
  • 1/2 tsp onion powder

  • 1/4 tsp rubbed sage (anti-inflammatory)
  • 2 Tbls coconut oil, or substitute 
  • 1 tsp fresh lime juice (optional)

Homemade Quinoa Bread

This  quinoa bread is very simple to make. It is gluten-free, yeast free, and its vegan. Because you don't need to mess with yeast this makes this an easy bread to make. Only takes about 5-7 minutes to prepare, and 60 minutes to cook, and another 60 minutes to cool. Preheat your oven to 400 degrees, and take out your bread pan and grease it with a little bit of coconut oil. When I started this recipe I used my blender to blend the quinoa, gluten-free flour (I used gluten-free oats), baking powder, baking soda, and salt. Rough Week

This week was a rough one for sure. You see my father-in-law Greg died this week shorty after our vacation up north. We did not expect him to leave us so sudden. Which led me to a little bit of emotional eating instead of dealing with my pain. When I recognized what I was doing I stopped, and assessed the situation. All I needed to do was to talk about happy memories, and cry a little bit. I feel like I am  a little numb on the inside...I can't let emotional eating steer me away from my goals no matter how painful a death can be. I know one day I will see him again in heaven.
